Yummy Talk-All-Night Goddess Corn Casserole
Thursday was a busy day.
My other half got to hang out with me at home most of the day… smiles… then I was called in for an meeting, some one offered me a job. It is a one year stint, but they are making this job courting so positive in every way I feel like I really should give it a chance, even if it means only getting about two months of early retirement. There are pluses and minuses to this, but I will leave that to another post.
I did also get to go visit my good friend and celebrate her birthday. I got to see some of my other wonderful friends, and made some new ones. It was a hoot; a good time had by all. I ended up crashing at their place, actually drinking “a wee bit”, and then doing something I haven’t done in a very long time… stay up and chat till the sun came up.
Yes, I’m a bit tired, and hence this post is a bit short.
One thing I wanted to write down, before I forget, was this wonderful recipe that my talk-all-night goddess friend shared with me (I don’t think she will mind, she mentioned that EVERYONE brings it to potlucks… so this might help that particular estimation…) This is really oh… so … good… and seems so easy too.
Corn Casserole
Saute onion and green pepper
Pour in one can cream corn
Pour in one can regular corn (with liquid)
One box Jiffy corn muffin mix (contents of box only)
(mix it all up in baking dish)
Top with a healthy amount of sharp cheddar cheese
Bake in over for an hour at 350
You can change this recipe up a little… they say, adding an egg, meat, different veggies to the dish will give it a different twist. I had the recipe listed above, with no additions, and it was just fabulously yummy. I am also a huge fan of corn muffins, and also of having corn in some of my rice dishes. So if you hate corn, well… cook this anyway, someone else in the house will love it!
Now, if I can only get these ole brain cells to fire, I may post the recipe for “Zen Hangover Potatoes”… just one of the amazing dishes the goddesses of the morning made for brunch on the second day of this wonderful birthday celebration.
